Rice
Rice is a staple food around the world and a source of sustenance for many people. In Italy, there are three major types of rice, each with its unique characteristics:
- The most commonly used is Arborio, which is also the most economical.
- Vialone Nano is grown and used in the Po Valley around the city of Mantua and is used to make local sausage risotto or seafood risotto in nearby Venice.
- Carnaroli is the king of Italian rice, grown in the Piemonte/Lombardy area around the city of Vercelli. It is the favorite of chefs because of its high acid content, which results in very creamy risottos.
